Pie Success

When my boyfriend decided to come visit me several weekends ago, I thought I would surprise him with his favorite food: PIE! So I did. And it turned out well! I made him a delicious blackberry pie which he loved. Since, I have made a vegan apple pie with my mom which was yummy. We just substituted vegan butter for real butter.

Catching Up

Whew! I have a lot of catching up to do on my blog! But the most recent news: I'm blonde! I had been thinking about bleaching my hair for a long time and finally did it this weekend. Surprisingly, the DMV was the place of my inspiration; I saw a cute girl with a bright blonde pixie cut walk in and was inspired to make the switch. Also, Carey Mulligan's blonde look kept making me want to do it. So I did!

Gone too far?

The brassy color my hair turned after the initial dye.

Highlights!

The finished product.

Carey Mulligan looking as cute as ever.

Thursday Sewing Project

Today I took a maxi dress that I never wore and hemmed it to make shorter dress. I used the remaining fabric to make a skirt. I am really happy with the way both pieces turned out! It feels good to reuse fabric.

The skirt I made using leftover fabric. Photo taken by Skyler Ilenstein.

The dress I hemmed. Hopefully I will wear it now!

Hillegass House

I moved into my new house in Berkeley last weekend with six other friends. My friend Sara and I are sharing a room and have had a blast decorating and painting it. It is looking great!

New Boots

Yesterday I bought some new boots! They are Tevas and very comfortable yet stylish. I love the button on the side. They are going to be perfect for winter weather and zipping around on my scooter!

Maple Streusel Muffins

I tried a recipe out of my new vegan cookbook- La Dolce Vegan by Sarah Kramer. The maple streusel muffins were easy and turned out beautifully! Yum! Here is the recipe:

Preheat oven to 400 degrees F.

Topping- Combine in a food processor and put aside.
1/3 Cup rolled oats
1 Tbsp flour (I used whole wheat flour)
3 Tbsp sugar
1/2 Tsp ground cinnamon
2 Tbsp vegan margarine (I used Earth Balance)
1/4 Cup pecans

Muffins- Stir together.
2 Cups flour (whole wheat)
2 Tsp baking poweder
1 Tsp baking soda
1/2 Tsp salt
2/3 Cup "milk" (I use coconut milk or almond milk)
2 Tsp apple cider vinegar
1/4 Cup oil
1/2 Cup maple syrup
2 Tsp vanilla extract

Oil 12 muffin tins or line with paper. Distribute the batter and then sprinkle with topping. Bake 12-15 minutes and enjoy!
