I tried a recipe out of my new vegan cookbook-
La Dolce Vegan by Sarah Kramer. The maple streusel muffins were easy and turned out beautifully! Yum! Here is the recipe:
Preheat oven to 400 degrees F.
Topping- Combine in a food processor and put aside.
1/3 Cup rolled oats
1 Tbsp flour (I used whole wheat flour)
3 Tbsp sugar
1/2 Tsp ground cinnamon
2 Tbsp vegan margarine (I used Earth Balance)
1/4 Cup pecans
Muffins- Stir together.
2 Cups flour (whole wheat)
2 Tsp baking poweder
1 Tsp baking soda
1/2 Tsp salt
2/3 Cup "milk" (I use coconut milk or almond milk)
2 Tsp apple cider vinegar
1/4 Cup oil
1/2 Cup maple syrup
2 Tsp vanilla extract
Oil 12 muffin tins or line with paper. Distribute the batter and then sprinkle with topping. Bake 12-15 minutes and enjoy!
